Sopa de Pollo con Fideos

This is the first one I've tried and it was delicious! Great flavor! I had no trouble finding the ingredients at the HEB in Flour Bluff. Next time I'll increase the vegetables and use fewer noodles. I doubled the recipe and used 2 packages of angel hair pasta and my soup was overwhelmed.

Sopa de Pollo con Fideos (Chicken Noodle Soup) (Serves 6)

1 whole chicken, cut in pieces
2 1/2 teaspoons salt
1 teaspoon pepper
4 tablespoons olive oil (1 reserved)
2 quarts of chicken stock
1/2 teaspoon oregano
3 tablespoons sofrito
2 celery stalks
1 large onion
1 medium carrot
1 large potato
1 envelope Sazon con Achiote
1 large bay leaf
Angel hair pasta


Rub the chicken with salt, pepper and oregano and one teaspoon olive oil and set aside for 30 minutes.


In a large heavy pot sauté the sofrito purée, onions and celery with remaining olive oil, for 5 minutes over medium-low heat.


Brown the chicken pieces to seal in their flavor.

Add the tomato sauce and the chicken stock or water to the chicken and bring to a boil.

Cover, reduce heat and simmer for 10-15 minutes.

Raise the heat and bring to a boil once more; add carrots, potatoes, sazon and bay leaf. Reduce heat to medium and cook uncovered for 20 minutes, until carrot and potatos are tender, stirring occasionally. During the last 5 - 10 , mintues add the angel hair and cook until pasta is done.

Laundry Out the Window

Rainy Sunday... perfect for doing the laundry and making a nice big pot of chicken soup... right? Yes! But while we were at the grocery store buying ingredients, we got the phone call from our old friend John. Yes Yeda is here in town and did we want to join them on Wet Express for an afternoon sail. Now Bruce, for some reason even though we have recently spent an entire week on the water in a sailboat, has the feeling that he doesn't sail enough. So, laundry is out the window and we are off to the marina.

I guess it's nice to make hay while the sun shines, but today there was no sun. We set out in 72 degree temp with a brisk breeze and absolutely grey water. But, there was a lot to catch up with between Yeda and myself so I got with the program.

There were two other young couples on board today. Not John's usual raucous navy bunch but a very nice group. We left CC behind and enjoyed getting to know some new people.

We had only just begun when it started to rain. I thought it was spray but when they turned the boat around to go back, the rain came down. I hid below until it let up a bit. By then, I had consumed about half a bottle of champagne so it didn't seem so bad....

Not my usual thing by any means, but both Bruce and John were happy men. Bruce reminded me of some supposed promise I had made him on Saturday morning that if we didn't do the race and John called... we would go. Anyway... now I've got to rush to get the laundry done and get ready for another busy week.

False Start

The last race of the BYC Summer Series took place today (I guess) without us. We had planned to do the race but when the weather became cool, wet, and nasty, neither of us was too excited about it.

We had every intention... we took the van to the marina and left it so that we would have wheels. We took a detour over to North Beach to try out Pier 99 that many of our friends said was great.

It had the usual beach place ambiance and good drinks.... although we missed happy hour which ends at 6pm. We arrived at about 6:01 pm.

The food was good... Bruce made the mistake of ordering fried fish (what was he thinking), but mine was a nice Costa Rican garlicy dish. There was a nice two-man-band playing favorites. In spite of the cool wind, we enjoyed the back porch dining. It was a great start to our weekend and I give it a solid 8.

We stopped over at the Lex entrance on our way out. I've not been here since it first came and it's changed a lot. Must put this on our list of things to do sometime when we have nothing to do... yeah right!

They had a couple of big pieces from the ship but it was really too cold to play on them.

We spent the night on the boat and in the morning over coffee... Bruce discovered that I had not brought along any warm clothes... (as usual) I'm in denial about winter. We knocked around doing the race... not doing the race... a win for not doing the race! So after breakfast, we packed it in and drove home.

I have spent the entire day up until now, working on catching up with my blog and my FaceBook page and organizing my pictures. It's a chore! Bruce says I'm obsessed. I just want to have all of this to look back over when I'm so old that my mind doesn't remember all the fun things we did. He'll thank me some day too.

Now, must prepare for the BYC Dinner. Ta!
